Chicken Burger

Ingredients:
1 lb ground chicken
Homemade BBQ Sauce
Garlic
Onion
Italian seasoning
Salt
Egg, scrambled

Homemade BBQ Sauce:
1/2 cup ketchup
2 tbsp brown sugar
2 tbsp Worcestershire sauce
1 tbsp white vinegar
1 tsp Garlic
1 tsp Onion
1 tsp Italian seasoning
4 tsp salt

Honey Chamomile and Lavender Chicken

Ingredients:
2 chicken breast
1 Tbs. Chamomile flowers
1 Tbs. Lavender petals
1 Tbs. Italian seasoning
1 ts. Onion powder
Salt
Honey
1 1/2 cups Water


1.In a container add chicken, chamomile, lavender, onion powder, salt, honey & water.
2.Marinate chicken up to two days in the refrigerator.
3.Cook in a skillet with olive oil, the chicken will be moist and juicy. Enjoy!

Chicken 'N' Pasta Stir Fry



Ingredients:
2 Chicken breast,sliced
1 Carrot,sliced
1 Clove Garlic
1/2 Onion
1 Bag No Yoke Dumpling Pasta
1 Bag Frozen Brocolli
1 Bag Frozen Peas
2 Jars Alfredo Sauce

1. Add chicken, onion, carrot, garlic in skillet with olive oil on medium heat until chicken is fully cooked.
2. Add 1/2-1cup water, whole bag of pasta and cover.
3. When pasta turns white, add frozen peas,broccoli and cover.
4.Add Alfredo sauce when vegetables are fully cooked. Enjoy!

Chicken and Cheese Lasagna Roll-Ups


2 Chicken breast
3 cups Water
Ricotta cheese
Parmesan cheese
Mozzarella cheese 
1/4 cup milk
Salt and pepper
Fresh crushed Garden Sage
Italian seasoning
8 lasagna noodles
Olive oil

1. In a rice cooker, add chicken breast  and 1 1/2 cups of water on white rice setting. If you do not have a rice cooker then use a sauce pan and boil. 

2. In a large sauce pan boil 1/ 12 cups of water and add lasagna noodles. When done set aside in a bowl to cool off.

3. When Chicken is done cooking, let cool on a plate then cut in pieces. Save the broth. Chop chicken in a food processor. 

4. In medium bowl combine Ricotta cheese, Parmesan cheese, Mozzarella cheese, chopped chicken, sage, italian seasoning and milk. 

5.  On a plate, lay out a lasagna noodle and cover half of the noodle.

6. Roll lasagna noodle like jelly-roll style. If any filling comes out tuck back in on the sides.
7. Place seam down in a grease pan with olive oil.


8. Cover noodles with tomato sauce, mozzarella cheese, and Italian seasoning. 

9. Bake at 375° F for 30 mins. Enjoy.

Cold Cut Chicken Sandwich



1/2 cup Chicken broth
1 Chicken breast
1 Collard green leaf
Honey Dijon Mustard
Swiss Cheese
2 slices White bread
1 sliced Green pepper


1. Boil whole chicken breast in chicken broth ahead of time and let cool.
2. Cut breast length ways once.
3. Spread Honey Dijon mustard on both slices of bread.
4. Add sliced chicken, cheese, Honey Dijon mustard, Collard green leaf, green pepper and top slice of bread. Enjoy.  

Cheesy Chicken and Rice Bake w/ Fried Potatoes and Ramps


My mother's two favorite dishes.  


Ingredients:
2 Chicken breast cubed
1 cup dry rice
2 1/2 cups water
1 can (26 oz.) Condensed cream of chicken soup
Italian seasoning
Favorite cheese
4-5 potatoes sliced
10-20 little ramp bulbs 
Bacon grease
Salt

1. In a 13x9 baking dish, mix soup, water, rice, chicken,salt and Italian seasoning 
2. Bake at 400°F for 1 hr. and add favorite cheese. 
3. clean ramps and cut only the bulbs off. 
4. In a medium frying pan add 1-2 tbs bacon grease, potatoes,salt and ramps. 
5. Fry potatoes and ramps until soft and one side golden brown. 






Easy Chicken Bake



Easy meal using fresh vegetables and stuffing.

Ingredients:
1-2 Chicken breast cut in 1 in. pieces
Fresh vegetables
1 can (26 oz.) Condensed cream of chicken soup
2 pkg. STOVE TOP chicken stuffing
3 cups chicken broth
1 (8 tbs) stick butter
Salt

1. Preheat oven to 400° F. In a large pot,boil chicken broth and butter then add stuffing mix; mix well. Remove from heat, cover and let set for 5 mins.
2. Mix chicken, soup, salt and vegetables in a 13x9 in. baking dish; top with stuffing. 
3. Bake for 45 mins. 

Note: I only used carrots I had on hand. Next time I'll add onions and leeks. 






Honey Mint Roasted Chicken



Ingredients:
Whole chicken
1/2 cup Honey
1 pack Mint leaves
dash Garlic
Olive oil

1.

Preheat oven to 425°F, rub olive oil all over chicken, place chicken breast up in pan.

2. In a medium sauce pan add honey, minced mint leaves and garlic, simmer for a few mins.

3. Place chicken in oven for 30 mins.

4. Lower oven to 375°F and cook for 2-2 1/2 hrs.

5. On the last 30 mins brush on honey mint sauce.

6. After 15 mins brush on sauce again.

7. Enjoy. Stuffing goes great with this meal.






Got any left overs? Try shredding the chicken and fry in up with a egg in the morning.

Crunchy Italian Chicken with Black Cherry sauce



Ingredients:
Chicken
1 cup Flour
1-2 eggs
Progresso Panko Crispy Bread Crumbs-Italian style
Gia Russa Bread Crumbs-Italian Seasoned
Shredded Monterey Jack cheese
Salt
Olive oil

1. Have 3 plates or pans, first plate with four, second with beat egg and third plate with both bread crumbs and shredded cheese mixed.
2. Slice chicken 2-3 times
3. Cover each piece with flour.
4. Then cover each piece with egg.
5. Cover each piece with the bread crumbs.
6. Heat olive oil on medium-low heat.
7. Fry each piece of chicken.

This breading works great with pan fish.

Black Cherry Sauce:
2 1/2 cups Black Cherries
2 tbs White sugar
2 tbs Cornstarch
4 cups water

1. Remove pits and chop cherries in food processor.
2. Add chopped cherries, sugar, and 2 cups of water in a medium size sauce pan on low heat.
3. When cherries are soft, combine water and cornstarch in a cup then add to the cherries.
4. Heat until the sauce has thickened.
5. Drizzle the sauce on chicken and enjoy.
Note: Red wine goes great with this meal.


Buffalo Chicken Ramen

Tired of plain ramen over and over again? Try this for a change.


Ramen Flavor Gravy



Don't know what to do with your leftover ramen flavor packets? Do you just eat the noodles dry, like I do sometimes? Don't throw them away, save them. I don't roast a whole chicken that often so I just use a quick way to make gravy whenever  I need it. A few days ago I had venison patties and my husband decided to make Salisbury venison steak. I came up with the idea for the beef gravy with a left over beef ramen flavor packet.

Cherry Nuka-Cola Chicken and Rice


Tasty meal with one of America's favorite soft drink brands. Also makes home made chicken broth.

Tired of the same old plain raman? Spice it up a little with your favorite pizza ingredients.

Potato Squash

This recipe is one of my favorites while growing up. For 2 years I have grown squash and canned to use all year round. I end up with so much squash it should last me for a few years unless there ends up being a food shortage or a fallout of some sort.I usually double this recipe to add meat to the leftovers the next day.

If you want meat, try with shrimp, chicken, beef or venison. The first time I made this for my in-laws, my father-in-law said it needed meat. So the next day with the left overs, I suited shrimp with butter and added to it. Third day I fried chicken in olive oil.I haven't tried with beef or venison yet.

Mojave Stew







I've been a Fallout fan since my husband bought Fallout 3.This recipe is base on Cook-Cook's Feind Stew from the game Fallout: New Vegas. I'm hoping I can make more fallout related recipes soon.
